Food in the Time of ‘Rona: Fried Chicken Sandwich #QuarantineMeals

 

As we settle into our new “normal”, most people are getting reintroduced to their kitchens and some are just now discovering that the stove gives off heat. Wherever you are in your quarantine countdown, it’s important to make sure you’re eating balanced meals (along with exercise and water, all that healthy jazz). But it can definitely get monotonous and boring fast if you don’t find yourself to be the creative type. With that, we bring you #QuarantineMeals. Quick (under 30 minutes) meals that are can hopefully brighten up life in the time of ‘Rona. First up, fried chicken sandwiches. Enjoy!

Serves 2

Ingredients:

2 medium chicken breasts (if you have thin chicken breasts, just double the amount)

1/2 cup of mayonnaise

1/4 cup chipotle sauce (La Costena can be found in most major grocery stores and my favorite brand)

Spices: seasoning salt, ground black pepper, onion powder, garlic powder

1 egg, beaten

1/4 cup whole milk

1 cup white flour

Vegetable oil for frying

Potato or brioche buns

Mixed greens

Sliced tomatoes

Sliced red onion

Sliced provolone cheese

  1. Mix the mayonnaise with chipotle sauce, set aside.

  2. Season chicken breasts with dry spices.

  3. Whisk egg and milk together in a small bowl. Dip chicken breasts in mixture and coat with flour. Repeat.

  4. Heat vegetable oil in a heavy bottom pot. Fry chicken breasts until golden (about 4 minutes on each side). Remove and drain. Top with cheese and cover with a lid so that it melts.

  5. Assemble your sandwiches:

    • Lightly toast your buns under the broiler until browned.

    • Apply chipotle mayo on both sides of the buns.

    • Arrange greens, onions, and tomatoes on the bottom bun. Add fried chicken on top and cover with the top bun.

  6. Serve with fries.

Note: Play around with this- if you want something spicier, swap out the provolone for pepper jack cheese. No mixed greens? Use whatever is in your fridge. Don’t like raw red onion? Sauté them in oil until soft. This is a weird time for all of us so go for it; don’t overthink and have fun.
